Lemon Rice (Chitra Anna – Picturesque Rice)
Lemon and turmeric flavored rice with toasted peanuts is so tempting to the palate. Easy to make for anytime of the day!
2 cups of Jasmine or Basmati rice
~ 4 cups water
1 tbsp butter
1 tsp small mustard seeds
1/2 tsp urad daal
1/4 fenugreek seeds
4 to 5 Thai green chilies slit lengthwise (any green chili) or red whole Byadagi chillies from Karnataka or to taste
1/2 tsp turmeric powder
1 tsp salt or to taste
1 stem curry leaves
1/4 cup of dry toasted peanuts
2 tbsp olive oil or (vegetable oil, safola, grape seed oil, etc)
2 tbsp finely cut cilantro
1 large lemon and 1/4 tsp lemon zest
1/2 cup fresh grated coconut or frozen (optional)
Microwave rice in water and butter for 23 minutes in open dish. Fluff the rice with fork and cool for about 5 min. before mixing it with the seasoning.
Temper mustard and urad in oil, reduce heat to add and saute asafoetida, fenugreek, chilies, curry leaves for 2 min.
Then add turmeric and toasted peanuts.
Turn off heat. Add salt, coconut, juice of 1 lemon, lemon zest and cilantro. Mix in the rice gently.
Note: Can make this dish with 1 chopped red onion which is added after curry leaves and cooked until soft.
Garnish: Press rice in a small bowl and invert it on to a plate and serve as is or with yogurt salad (raita).
