Pineapple Suji (Cream Of Wheat) Halwa
Today on Janmashtami I decided to make a sweet dish that doesn’t take too long. Usually halwa is made on auspicious days for prasaad. One way to spread your love with sweetness.
- 1 cup cream of wheat (suji)
- 1/2 cup sweet butter or 1/2 cup clarified butter (ghee)
- 3/4 to 1 cup sugar
- 1/2 tsp cardamom powder
- 1/8 tsp saffron powder
- 1 cup pureed canned pineapple (no sugar)
- 3 tbsp yellow raisins
- 4 tbsp sliced almonds
- 2 tsp chironji soaked in hot water and dried
- 2 1/2 cups boiling water
Melt butter in a pan on medium heat and stir in cream of wheat. Roast for about 5 minutes until golden color. Reduce heat to low, add cardamom, saffron, raisins, 1/2 of the almonds and chironji (dried), then stir for another 4 to 5 minutes. Add sugar. Be prepared to mix in the pureed pineapple after hot water has been poured slowly in the pan and evenly mixed, then cover and cook for few minutes. This recipe doesn’t require cream of wheat to be brown, just enough roasting so that the color remains golden and the roasted smell comes through.
Garnish with the rest of slivered almonds.
Option: melt sugar in water in the microwave. Also can substitute water with milk.
