Gobi Galore (Cauliflower)

Most of people like grill cheese and I am one of them. Crispy buttered white or sourdough bread with gooey American cheese oozing down on sides and some of it being fried on the pan. Gobi galore is a delicious filling with sliced jalapeno and red onion in between 2 slices of cheese.

Ingredients:

1 cauliflower–each bloom sliced

1/3 block of  grated paneer

1 tomato pureed with 2 red bell pepper and 1 tbsp tomato paste

2 tbsp olive oil

1 tbsp butter

Fresh Blend: coarsely blend in the food processor

1 big piece of ginger

1 small piece of fresh turmeric

1/2 red onion

2 garlic cloves

1/3 bunch of cilantro

Masala (spices):

1 tsp cumin seeds

1/8 onion seeds

1/4 tsp red chile powder

1/2 tsp turmeric powder

1 tsp of coriander and cumin powder

OR  add 1 1/2 tsp of hot or mild curry powder instead above 3

1/4  tsp pav bhaji powder

1/4 tsp garam masala

3/4  tsp salt or salt to taste

Preparation:

Temper cumin and onion seeds in heated oil, then add butter along with the fresh blend for 3 minutes. Then add all the masala for another 1 min with sliced cauliflower on medium low heat.  Cook and stir frequently until cauliflower is firm soft in its own moisture. Add the grated paneer for another 2 minutes and lastly add the pureed bell pepper, tomato and tomato paste which have been microwaved for 3 to 4 minutes. Cook for another few minutes until oil oozes to the top. Garnish with cilantro. Enjoy with rice or chapaati.
