A new wave of vegetarian cooking!

Butternut Squash Spaghetti Sauce and More

This sauce is tart, slight hint of sweetness and creamy. Nice substitute from regular tomato base sauce.


3 cups of cubed butternut squash

1 cup of cubed red yam (optional)

1 small white onion or shallots thinly cut

2 to 3 garlic cloves minced

2 tbsp olive oil and 1 tbsp butter

1/2 tsp pepper supreme–consist of white, black, red, etc.

1/4 tsp cayenne

1/2 tsp Italian seasoning (taste of different herbs in each bite)

1 tbsp rue–flour, butter, milk

2 tbsp tomato paste or 2 Roma tomatoes

3 cups Bulgarian buttermilk or 2 cups yogurt

1/2 cup medium cheddar and jack cheese

1/4 cup Parmesan

1 tsp sea salt or to taste

2 tsp honey or agave or brown sugar, molasses (bella, gurd)

water to make nice consistency


Microwave cubes of butternut and yam for 4 to 5 min. In oil saute onions and garlic until soft then add butter, pepper, cayenne, salt, rue, tomato paste, Italian seasoning, butternut, yam and all cheeses. Lastly reduce heat to add buttermilk and honey. Blend all ingredients and simmer 4 to 5 min. MIX IN ANY PASTA! Garnish with Parmesan, fresh grated mozzarella and fresh basil.
